Thereís something about the smell of smoked meat that is undeniably alluring. Maybe itís a hearkening to human ancestors and their mounds of mammoth slow roasting over their cave fires.
Itís only logical to put that kind of power on wheels, on something like a food truck.
Actually, donít call it a food truck. John and Angie Crim, co-owners and operators of Pageís Big Johnís Texas Barbecue, saddled up their ďself-contained mobile barbecue trailerĒ for a Chandler food truck competition earlier February. Of the 37 contestants, Big Johnís took a respectable fourth place finish. The couple spent an entire weekend serving samples of slow Texas smoked beef brisket, pulled pork, ribs, and hot wings to the thousands in attendance.
